This is a Sauvignon for non-sauvignon-drinkers. No green grass, no pyrazines, and this is entirely due to the planting of the vines.
Natural fermentation also gives the wine a beautifully balanced aroma that doesn't punch you in the face. Inspired by Sancerre.
The Lyre System (V) makes sure that the bunches get more sunlight than with regular planting. This increased sunlight exposure decreases the pyrazines. The increased root competition in extremely poor soil gives you lower canopy, more sun reaching smaller bunches, hence complex yet elegant wines.
Made 100% in stainless steel tanks with extensive lees contact. No yeast or enzymes added. And sleep! The low pH in our soils demands that our wines sleep for some years before they are ready.
