Koen learned to grow Pinot Noir in Burgundy, and his Pinot Noir is therefore strongly inspired by the wines of the Côte de Nuits.
All vineyard blocks are planted predominantly to clone 777, complemented by a portion of clone PN115. One block is planted at high density (vines 1m apart), further contributing to concentration and complexity.
The vines grow on clay and ferricrete-rich soils, which impart the wine's characteristic earthy and forest-floor notes, while retaining a vibrant core of fruit. In contrast, Pinot Noir grown on sandy soils generally produces a lighter, more overtly fruit-driven style.
Our bunches are no larger than the palm of your hand. These naturally small bunches, with their tiny berries, contribute to a slightly deeper colour of the wine.
The various blocks are harvested separately according to their individual ripeness. They are fermented in open-top barrels and matured in different vessels, and are blended together prior to bottling. We believe the wine benefits from the combination of the different blocks and soil types, rather than releasing individual single-block wines.
